Polite and concise has worked for me: “Thanks for the chat, but I don’t feel a romantic connection. I wish you the best.” After one date I mention the date: “Appreciated meeting you for coffee.” No reasons. It’s respectful to both parties and avoids ghosting while politely rejecting someone online.
